The idea for these little beauties magically came to mind while I was gazing longingly into the frozen food section at Whole Foods Market.
Why do I go there? Why do I do that to myself?
I counsel clients to STAY OUT of the middle aisles of the grocery store. All you will find is sugar and processed foods!
And yet sometimes I tiptoe into the big, bad underworld of sugary goodness. And stare. I don’t buy anything. I just like to look at all the yummy treats.
I try not to eat sugar. It makes me feel awful. I get ulcers in my mouth and feel sluggish. The best way I can describe is I feel acidic. All over. But sometimes my cravings get the best of me.
Buying a pint of Ben & Jerry’s Phish Food is just going too far for me, but a healthier version of something delicious would suit me just fine.
In the wintery wonderland full of ice-cream tubs and boxes of wrapped frozen indulgences, I saw a box of frozen bananas drenched in chocolate.
Enter my new idea and newfound love: Frozen Banana and Peanut Butter Sliders. I like them so much I wrote a poem for them.
Frozen bananas are yummy
Peanut butter in the middle tastes great
Chocolate on top gives it a fun crunch.
Can I please have one…or maybe eight?
Frozen Banana and Peanut Butter Sliders
Gluten Free, Dairy Free, Vegan
Ingredients
Medium ripe bananas
Smooth peanut butter (I used a salted, honey-roasted peanut butter. The salt gives a nice balance to the sweet)
Gluten free, Dairy free chocolate chips (about half of the 10 oz. bag)
If you want a really fancy version, use melting chips with a high amount of cocoa butter
Directions
Line a cookie sheet with parchment paper. This will help keep your frozen banana bites from sticking.
Slice bananas about ½ in thick. Place half of the slices on the parchment paper. Put a dollop of peanut butter on each banana slice. Lay the other half of the bananas on top of the peanut butter, making a little banana sandwich.
Freeze the banana bites for an hour so they get firm.
Melt about half of the bag of chocolate chips (5 oz).
Take the banana bites out of the freezer and drizzle the melted chocolate over them. Then put them back in the freezer for 3-4 more hours to get really firm.

Oh my goodness these sound amazing! Now to go out to buy a food processor since I can’t just buy peanut butter. Yum.
Making your own peanut butter is a great idea! I bet it would be a lot cheaper too!!
