The blueberries squished through his fingers and he giggled with delight.

On a sunny, warm afternoon, we picnicked and reclined, wind rusting through our hair. Our meal of cheese and veggies was finished with delicate melted blueberries, drowned in hints of ginger, honey and orange. Fresh cream seeped onto our spoons and time crept past. Spoonfuls too many to count filled our mouths with the taste of a summer coming soon.

Seasons seem to come upon us faster these days. Ezra gets bigger and older by the minute and life continues to feel more full. Full of family, hopes, dreams and spoonfuls of summer berries.

With the bowl nearly empty, Ezra squishes the remaining berries through his fingers. He giggles with delight. Covered in dirt and blueberry juice, I’m reminded of the joy to be little. To see beauty in all things. To savor the sweet moments and relish all things wonderous and new.

Melted Blueberries with Ginger and Mandarin Orange

gluten free//primal

Ingredients

1 teaspoon unsalted butter
1 teaspoon grated fresh ginger
2 1/2 cups fresh blueberries
1 Tablespoon honey
Finely grated zest and juice of 1 mandarin orange
Whipped cream, to serve

Directions

Melt the butter in a skillet over medium heat. Stir in the ginger and saute until it releases its spicy perfume, about 2 minutes.

Stir in the blueberries, honey, and mandarin zest and juice. Saute the berries over medium heat until the berries soften and their juices form a thin syrup, about 6 minutes. Spoon the warm berries into individual bowls and seve topped with a generous spoonful of whipped cream.
